Garlic seafood skewers

I couldn't find this recipe on the web (it is from Canadian Living's BBQ
book) so I am going to share it here. But if you can get the book, get it.
It is packed with easy and yummy bbq recipes.
- 1 salmon or halibut filet, skinned
- 8 large fresh shrimp
- 4 large scallops
Each weighs (175 g/6 oz) Cut up the salmon into 1 inch cubes. Peel and devein shrimp. Using four skewers, place the fish.
Put skewered fish in a shallow glass dish Make a marinade of
3 T olive oil
1 T white wine vinegar
3 cloves of garlic minced
1 T choped fresh thyme (or 1 tsp dried if that's all you have)
1/4 tsp each of dry mustard, salt and pepper
(You want all these ingredients: each one makes a difference) Whisk the marinade. Pour it over the fish. Cover and marinate at room
temperature for 30 minutes (not in the fridge) Reserve the marinade.
Grill skewers on medium high heat for 8 to 10 minutes until scallops are
opaque and fish flakes easily. Feel free to experiment with different fish. Try to use more full flavored
and "steak" like fish (e.g. Cod). Also play around with the proportions. Goes well with simple sides like rice pilaf or couscous, followed by a
salad. Also a good rich white wine goes nice with this, but something from
the Loire or a sauvignon blanc should also work.
